Both single-stage # CAM59013 and dual-stage # 108221 regulators will both reduce pressure down to 11" WC, but the difference is the stability of the output pressure. The single-stage regulators quickly reduce the pressure down and give you a bit less stable of an output, whereas the dual-stage regulators will provide a much more steady flow. I haven't heard of Furrion tankless water heaters having issues with gas pressure, but that issue can be solved by just ensuring that your regulator is in good working condition and that the vent on the bottom of it isn't getting clogged. Adding in a secondary valve would likely cause more issues and be more cost than it's worth.
